How to Make Sausage and Peppers

Ingredients
- 1.5 lb (680 g) Italian sausage links
- 2 tbsp olive oil
- 3 bell peppers, sliced
- 1 large onion, sliced
- 3 garlic cloves, sliced
- 1 tsp dried oregano
- 1/2 tsp kosher salt
- 1/4 cup (60 ml) water or white wine
How to cook sausage and peppers step by step
- Heat 1 tablespoon oil in a large skillet over medium and brown the sausages on all sides, about 8 minutes. Move them to a plate.
- Add the remaining oil, peppers, and onion; cook 10 minutes, stirring occasionally, until soft and lightly charred.
- Stir in the garlic, oregano, and salt and cook 1 minute.
- Return the sausages, add the water or wine, cover, and simmer 6–8 minutes until the sausages read 160°F (71°C).
- Slice the sausages and toss them back through the peppers before serving.
Chef's tips
- Leftovers make an excellent breakfast hash with a fried egg on top.
- Chicken sausage works the same way; it just needs a couple of minutes less.
