How to Make Fried Rice

Ingredients
- 4 cups cold cooked rice (day-old is best)
- 2 eggs, beaten
- 2 tbsp neutral oil
- 1 cup diced vegetables or leftover cooked meat
- 2 scallions, sliced
- 2 tbsp soy sauce
- 1 tsp sesame oil
How to cook fried rice step by step
- Break the cold rice apart with wet hands so there are no clumps.
- Scramble the eggs in hot oil, then remove them from the pan.
- Stir-fry the vegetables or meat over high heat for 2 minutes.
- Add the rice, press it into the pan, and let it sit 30 seconds at a time so it crisps.
- Return the eggs, add soy sauce and scallions, toss, and finish with sesame oil.
Chef's tips
- Warm, fresh rice steams and clumps — chill it uncovered for 20 minutes if that's all you have.
- This is the single best way to clear out small leftover portions.
