Ingredients
- 3 eggs
- 1 tbsp butter
- 1/3 cup (40 g) grated cheese
- 1 tbsp milk (optional)
- Salt and pepper
How to cook cheese omelette step by step
- Beat the eggs with the milk, a pinch of salt and a grind of pepper until fully blended.
- Melt the butter in an 8-inch nonstick pan over medium-low heat until foaming but not browning.
- Pour in the eggs and stir gently with a spatula for 20 seconds, then let them set.
- When the top is still slightly wet, scatter the cheese over one half.
- Fold the omelette over the cheese and slide it onto a plate.
Chef's tips
- Low heat is the whole trick — brown spots mean the pan was too hot.
- Any melting cheese works: cheddar, jack, Swiss, or the last of a bag of mozzarella.
