How to Make Baked Ziti

Ingredients

  • 1 lb (450 g) ziti or penne
  • 1 can (28 oz / 800 g) crushed tomatoes or 3 cups pasta sauce
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 1/2 cups (350 g) ricotta or cottage cheese
  • 2 cups (200 g) shredded mozzarella
  • 1/2 cup (50 g) grated parmesan
  • 1 tsp dried oregano
  • Salt and pepper

How to cook baked ziti step by step

  1. Heat the oven to 375°F (190°C) and boil the pasta 2 minutes short of the package time; drain.
  2. Soften the onion in the olive oil for 5 minutes, add the garlic and oregano, and cook 1 minute more.
  3. Stir in the tomatoes, season with salt and pepper, and simmer 10 minutes.
  4. Fold the pasta into the sauce with the ricotta and half the mozzarella.
  5. Spread in a 9x13-inch dish, top with the remaining mozzarella and the parmesan.
  6. Bake 25–30 minutes until bubbling, then rest 10 minutes before serving.

Chef's tips

  • Undercooked pasta finishes in the oven — fully cooked pasta turns soft.
  • Assemble it a day ahead and add 10 minutes to the bake from cold.
